Best Tailgate Recipes from Jennifer Cowan – Artichoke Dip
With college football season just 2 short weeks away I thought that I would do a Tailgate Recipe Series over the next few weeks as we get into the football season.
Shortly after moving to Atlanta in 2004, I met my husband, Tim Cowan, and was introduced to Clemson Football and tailgating Southern Style. Growing up in Southern California I was not exposed to the massive College Football Tailgating ritual that is such a tradition here in the South. As a person that loves traditions and good food and drinks I immediately fell in love with this tradition. As I started going to Clemson Football games with Tim and seeing all of the different Tailgating traditions that families had simply amazed me! All of these die hard fans set up beautiful tailgates with huge tents, flower arrangements, banners, color coordinated decorations, TV’s, games, decked out Clemson themed outfits and lots of delicious food and drinks! It was amazing!
As we would go each week I came to realize that preparing the menu for our tailgate was always a huge part of the experience and one that I loved! People always have these amazing spreads from BBQ, Fish Fry’s, Low Country Boil, and your good old stand by- hamburgers and hot dogs to amazing appetizers and desserts! There is no detail left behind!
So, with the buzz of football season in the air, I thought I would start posting some of my favorite Tailgating Recipes I have collected over the years. I hope you enjoy these recipes and if you have a favorite Tailgating recipe that you would like to share, please submit it! I am always looking for great new recipes to enjoy and share at our tailgate!
- 3- 8oz. bars of cream cheese softened
- 1-cup mayonnaise
- 1 cup grated Parmesan cheese
- 2 cloves minced garlic
- 3 cans artichoke hearts (in water- drained)
- 2-3 tablespoons chopped jalapenos
Preheat oven to 350.
In large bowl combine cream cheese, mayonnaise, garlic, Parmesan cheese, jalapenos. Mix together. Chop artichokes and add to mixture. Mix and pour dip into a 9×13 casserole dish. Bake at 350 degrees for 35-45 minutes until bubbling and top is slightly browned.
Serve with Tostitos Scoops.
